Best Cooking Pulses of Portage la Prairie will be supplying pea fibre to the U. S.-based SunOpta Ingredients Group, which is expanding its portfolio of functional fibres to include organic and conventional pea fibre.

The process of making pea fibre is highly sustainable from start to finish. Pea fibre is made from the hulls of field-dried peas and is a byproduct of pea splitting. Pea crops are not irrigated, similar to oats and barley, and the manufacturing process uses little water in the cleaning, splitting and milling into fibre. This environmentally friendly ingredient fits well with SunOpta’s line of natural oat, soy, and barley fibres.

Pea fibre is non-allergenic, non-GMO, and gluten free and contains up to 90 per cent dietary fibre. It is approved by Health Canada as a novel fibre for inclusion in bakery and meat products to make dietary fibre claims.

SunOpta Pea Fibre has a bland flavour, light colour and smooth texture making it an excellent choice for fibre fortification. Its moisture-binding properties provide improved shelf life in baked goods and higher yields in meat systems. Pea fibre can be incorporated into a wide variety of foods including nutrition bars, breads, crackers, pasta, meat, and meat substitutes.

Researchers at the University of Manitoba’s Richardson Centre for Functional Foods and Nutraceuticals recently conducted a clinical trial which found that the dietary fibre-rich content of pea fibre or whole pea flour helped to regulate insulin in overweight adults with elevated cholesterol levels. They showed that 12 grams of pea fibre or 53 grams of pea flour per day resulted in significant reductions in fasting insulin levels and decreased insulin resistance. The pea fibre and whole yellow pea flour used in the study was provided by Best Cooking Pulses.
